Potatoes are classified as a vegetable since they are the edible component of a plant. They are starchy tubers, not grains. Grains, such as wheat, rice, and oats, are edible seeds from grass-like plants. So, while potatoes constitute a vegetable, grains are a distinct type of food.
Senators Susan Collins and Michael Bennet, a Maine Republican and a Colorado Democrat, are leading a campaign to persuade federal authorities to abandon plans to refer to the root vegetable as a grain, which they believe could harm farming.
The suggestions to remove the potato's "vegetable" category come in the upcoming Dietary Guidelines for Americans 2025-2030, which were developed collaboratively by the two departments.
Americans consume more potatoes than any other vegetable, 50 pounds per person per year, according to USDA data, albeit nearly half of them come in frozen form, such as fries.
