Caesar Salad is my favourite salad and I enjoy it when I eat it at restaurants, but it's not the healthiest salad specially when you're having the vegetarian version cause the base is filled with oil mayo- leaving you feeling heavy. So whenever I make it at home I keep it light with this yummmmy dressing.
Let's make it step by step;
For Croutons;
- 2-3 Slices of bread
- 1tsp Olive oil
- 1/2tsp Oregano
- Salt
Mix and bake. You could also just toast the bread and then cut it into pieces and add everything to it.
Dressing;
- 1/2cup Hung Curd (place 1cup curd onto a strainer for
15 mins) or just use thick curd
- 1tsp Mustard Sauce
- Salt
- 1/2tsp Pepper
- 1tsp Honey or more
- 1/2 a lemon or more
- 3-5 cloves of garlic finely chopped
- 5-6tbsp Parmesan cheese/ Nutritional Yeast/ you can also use 3tbsp Cashew Nut powder
Mix everything well. You can now store this in the fridge for upto 4 days.
Parmesan crisp;
This really adds a nice texture to your salad along with a restaurant kinda feel. Sprinkle Parmesan on a baking tray and bake at 200*C for 6 mins. Or you can also cook it on a non stick pan till it gets golden brown. Do not over cook or it will get bitter. You can also use processed cheese for this, place it on a butter paper in the microwave for 30-40secs. Mix of lettuce or even one kind is fine. I used Iceberg lettuce, Romaine lettuce and Lollo Rosso.
