PUMPKIN PIE CREPES❤😋
Yummy and delicious pumpkin pie crepes😍😍
INGREDIENTS:
1 chia egg
90g (spelt) flour
1/2tsp baking powder
1tbsp corn starch
1/2tsp pumpkin spice
180ml plant milk
2-3tbsps pumpkin purée
1tsp of apple cider vinegar
1tsp of sweetener (e.g. coconut sugar)
yoghurt
fresh fruit
Method:
1. Start by making the chia egg by combining 1 teaspoon of chia seeds with three teaspoons of water.
2. Let it sit for around five minutes while you combine the other ingredients: Fine flour, baking powder, pumpkin spice, corn starch and sugar.
3. Give this a quick mix and then add the liquid ingredients, including the chia egg.
4. Mix everything together using a whisk and then bring a non-stick crêpe pan with some coconut oil to medium heat.
5. Add the batter and make sure to spread it out very thinly, but not too much so that the crêpes don't break!
6. Once they're done on one side, flip them and repeat this process until all your batter is used up.
7. Now fill each crêpe with some yoghurt before folding them in half two times.
*I bet adding a chocolate spread would also work really well here, or some dusted sugar/ maple syrup.
*This recipe makes three medium sized crêpes.
