Ingredients:
1/2 large onion
3 garlic cloves
1 tbsp olive oil
2 tbsp tomato paste
1/4 cup light cream cheese
1/4 cup parmesan cheese (sub any light cheese)
3/4 cup pasta water
1/2 tsp salt
Topped with:
parsley
crushed chili flakes
protein of choice
Instructions:
1) Chop onions and garlic.
2) On a medium heated pan add olive oil and combine onion and garlic cloves - cook until translucent.
3) Add tomato paste, cream cheese, cheese, salt, and pasta water.
4) Mix in cheese until well combined.
5) Toss in pasta and top with parsley and protein of choice.
