Umami sesame noodles are a delicious vegan dish packed with savory flavors. Hereโs a recipe to make them;
Ingredients;
- 8 oz (225g) of noodles (such as soba, udon, or spaghetti)
- 2 tablespoons sesame oil
- 3 tablespoons soy sauce (or tamari for gluten-free option)
- 2 tablespoons rice vinegar
- 1 tablespoon maple syrup or agave nectar
- 1 tablespoon miso paste
- 1 teaspoon grated ginger
- 2 cloves garlic, minced
- 1 tablespoon sesame seeds, for garnish
- Sliced green onions, for garnish
- Optional: 1 tablespoon chili garlic sauce or sriracha for heat
Instructions;
1 Cook the noodles according to package instructions until al dente. Drain and rinse under cold water to stop cooking. Set aside.
2 In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, maple syrup, miso paste, ginger, garlic, and chili garlic sauce if using. Adjust seasoning to taste.
3 Pour the sauce over the cooked noodles and toss until well coated.
4 Garnish with sesame seeds and sliced green onions.
