I think I can have avocado toast all day all night. so many ways to zuzh it up.
Generally when I eat avocado toast it is with an egg. But this time, as it was late in the afternoon and creeping towards dinner time, I wanted something lighter. I had a bunch of tomatoes and alfalfa sprouts in the fridge that would’ve gone bad, had they not been eaten soon, and so I decided to try something new. I did a base layer of toast with avocado on top, and then went to town. I combined tomatoes with some olive oil, garlic, spices, and basil. Layer them atop a bed of alfalfa sprouts, and sprinkled feta cheese on top. It was so tasty and light - I highly recommend!
Recipe:
2tbsp olive oil
Handful of grape tomatoes (I like the tri-color tomatoes as it adds color)
2 cloves of garlic (I like my garlic so feel free to half if it’s too much for you)
Handful of fresh basil leaves, chopped
Pinch of salt and pepper to taste
2 pieces of bread of choice (I used Dave’s Bread - if I had sourdough hands down would have used it)
1/2 avocado (mine was huge so I only used a half of one)
Handful of alfalfa sprouts
2 spoonfuls of feta
Lemon quarter
Combine the top list of ingredients (up to salt and pepper) in a bowl. Toast your bread to your liking and top with smashed avocado. Then lay down some alfalfa sprouts (as much as you’d like). Place the tomatoes on top of the alfalfa sprouts and then sprinkle feta. I squirted a quarter of a lemon on top of both pieces of toast and it was amazing!
