BLUEBERRY CHEESECAKE CRÊPES😍🤤
I'm back with another recipe for you! This time it's blueberry cheesecake flavored and I'm absolutely in love with the beautiful color and the taste. 😋In my opinion this combination is so underrated, it hits the spot every time. Such a cozy, easy and tasty breakfast;)🥰
INGREDIENTS:
90g spelt (whole wheat) flour
1 chia egg
1/2tsp baking powder
1tbsp corn starch
170ml plant milk
50g frozen blueberries
1tsp sweetener (maple sirup or coconut sugar)
yoghurt
vanilla
maple syrup
Instructions:
1. Start by making the chia egg! So in a small bowl, combine 1 teaspoon of chia seeds with three teaspoons of water and let that sit while you combine everything else.
2. To a blender or food processor, add all of the ingredients listed above and pulse a few times until we'll combined. Finally, mix in the chia egg.
3. Then bring a non-stick crêpe pan with some coconut oil to medium heat.
4. Add the batter and make sure to spread it out very thinly, but not too much so that the crêpes don't break! Once they're done on one side, flip them and repeat this process until all your batter is used up.
5. This recipe makes three medium sized crêpes. Fill them with the yoghurt cream and enjoy!🫶
