Smashed pea toast🤤
So we all know and love avocado toast, but have you ever tried smashed peas on toast?

This is such a fresh, higher protein and budget friendly option! It's delicious when served with a poached egg too 😍
Simply cook some garden peas with a little bit of garlic. Once cooked through add the peas, garlic, a drizzle of olive oil, lemon juice, tahini, salt, pepper, chilli flakes and a few fresh mint leaves (optional) and pulse the mixture until it's a smashed texture rather than a puree.
I spread the peas on some gluten free bread and topped with a poached egg! So simple but so delicious 😋
