this is looking awesome
I had this for lunch yesterday and it was so yummy and very nutritious. It goes great on a sandwich or even by itself (I ate about a quarter of it while making my sandwich)! I got the recipe from Nasim Lahbichi’s website, and I added and substituted some of items for different things.
Recipe:
1 can of chickpeas, rinsed (save the water from chickpea can - aquafaba)
3 tbsp of pesto
3 tbsp of nutritional yeast
Zest of 1 lemon
Juice of 1 lemon
3 cloves of garlic
3 tbsp chopped fresh basil
3 tbsp chopped parsley
1 shallot minced
1 tsp of red pepper flakes
1/2 tsp oregano
3 tbsp chopped pistachio (could do walnuts or pecans too)
1 tsp of capers (optional)
Mash the chickpeas in a bowl to whatever consistency you like (I did even ration of mashed to partially mashed). Then add in the rest of the ingredients in, and some of the aquafaba if it looks too dry.
I toasted sourdough bread and made a sandwich with tomato, alfalfa sprouts, tzatziki, hummus, and avocado.
