Korean Japchae - When Noodles Get Healthy !! A warm bowl of noodles?? This one is just what you need, it's guilt free and super yummy. The magic lies in the sauce mix which is added to the noodles for all that awesome flavour Korean Japchae.
1 Mix 1 tbsp Dark Soy Sauce (or 2 tsp light soy sauce +1 tsp dark soy sauce) 1 tsp Rice Vinegar, 1/2 tsp Sriracha (or any hot sauce ), 1 tsp brown sugar or any sweetner (I used honey) in a big bowl.
2 Use Korean Glass Noodles l'd like me use rice noodles. I Soak 70-80 Rice noodles (I used Peacock Rice spaghetti from Amazon.In brand) in hot water, as per instructions in the packet. Drain all the water and add the spaghetti to the sauce mix. Mix well and let the noodle sauce mix sit for 20 mins.
3 Meanwhile chop veggies of choice, i took 1/3rd each of meediun sized green, red and yellow bell pepper 1/2 Carrot, 1/2 onion, 5-6 Mushroom, 3-4 Baby corn 5-6 cloves garlic, some spinach.
4 Add sesame oil 1 n 1/2 tbsp to a pan. Cook garlic. Next onion, baby corn n carrot. Let it cook. Add mushroom and bell pepper. Cook everything well.
5 In the meanwhile noodles must have soaked in all the sauces. Add the noodles to the pan and cook for a minute mixing everything. Add salt to taste and some pepper powder. Mix everything well. Garnish with some sesame seeds and spring onions.
