Ingredients:
1 chicken breast
Salt and Pepper
Mexican seasoning
Veggies of choice (e.g., bell peppers, broccoli, carrots)
Basil leaves
3-4 walnuts
1 tbsp sunflower seeds
2 tsp olive oil
Roasted cumin
Lemon
Mixed greens
Boiled quinoa
1/2 avocado
Cucumber ribbons
Sesame seeds
Instructions:
1. Marinate chicken breast with salt, pepper, and Mexican seasoning and cook for 3.5 minutes on both sides.
2. In the same pan, sauté veggies with salt and pepper, cover, and let them steam for 1-2 minutes.
3. ake a dip with basil leaves, walnuts, sunflower seeds, olive oil, salt, roasted cumin, lemon, and water.
4. Cut half an avocado and make cucumber ribbons with peeler.
5. Assemble the bowl: mixed greens, chicken, boiled quinoa, sautéed veggies, sliced avocado, cucumber ribbons, pesto dip. Garnish with sesame seeds and a lemon slice. 😍
