Ingredients:
β’ 1 cup vermicelli (sevaiya)
β’ 1 tablespoon ghee (clarified butter)
β’ 1/4 cup mixed dry fruits (such as almonds, cashews, raisins)
β’ 3 cups milk
β’ 1/2 cup sugar (adjust to taste)
β’ 1/4 teaspoon cardamom powder
β’ Saffron strands (optional, for garnish)
Instructions;
1 Heat ghee in a pan over medium heat.
Add the vermicelli and roast until golden brown, stirring constantly to avoid burning. Remove from the pan and set aside.
2 In the same pan, add the mixed dry fruits and sautΓ© until they turn golden brown. Remove from the pan and set aside.
3 In the same pan, pour the milk and bring it to a gentle boil.
4 Once the milk starts boiling, add the roasted vermicelli and simmer on low heat, stirring occasionally, until the vermicelli is cooked and the milk reduces to about half its original volume.
5 Add sugar and cardamom powder, and mix well until the sugar dissolves completely.
6 Simmer for a few more minutes until the sevaiya reaches your desired consistency. If nets too thick, you can add a little ore milk.
7 Once done, turn off the heat and let the sevaiya cool slightly.
8 Garnish with the sauteed dry fruits and saffron strands, if using.
9 Serve warm or chilled, according to your preference.
