Oyster Mushroom Shawarma🥙
Ingredients:
200g Oyster Mushrooms, shredded
1.5 tbsp Ginger Garlic Chilli Paste
Juice of half a Lemon
1 tbsp Olive Oil
Atta (Whole Wheat) Roti
Spices- 1tsp each- Salt, red chilli powder, coriander powder and meat masala
For Dressing:
Hung Curd
Grated and Soaked Cucumber
Mint + Coriander Leaves, chopped
Salt and Pepper to taste
Masala Onions (for garnish)
Instructions:
1. In a bowl, combine shredded oyster mushrooms, ginger-garlic-chilli paste, lemon juice, spices and olive oil.
2. Transfer the mushroom mixture to a cast-iron skillet. Press it down to ensure water evaporation and char the mushrooms. Cook on high heat.
3. Prepare simple atta roti (you can add instant yeast to the doigh as well to make it soft and bready).
4. For dressing, mix hung curd, grated and soaked cucumber, chopped mint and coriander leaves. Season with salt and pepper.
5. To the cooked roti, spread the curd dip evenly, add the charred oyster mushrooms on top and garnish with masala onions.
6. Roll the assembled ingredients tightly into a shawarma wrap.
