Recipes for baked oats have been all over social media, and they all look extremely good! I tried one this week, and although I didn’t have all the ingredients (no banana or applesauce, which most of the recipes call for), it was very good. But I do think using a banana or applesauce would have been better, from a flavor and consistency perspective.
Another thing that is awesome about baked oats is you can add in whatever you like to customize it! For example the recipe I used didn’t originally call for blueberries, coconut, or pecans.
Here is the recipe I used:
1/2 cup of oats (I did half oats half oat flour)
1 tbsp chia seeds
1 tbsp ground flax
1 tsp vanilla extract
1 tsp baking powder
1 tbsp of coconut (save 3/4)
1 tbsp of pecans (save 3/4)
Pinch of salt
1 tbsp blueberries
1 tbsp chocolate chips
1 tbsp yogurt (dairy free or regular-I used reg but I think dairy free might be better!)
1/2 banana mashed (can sub with 1/4 cup applesauce or 1-2tbsp of sweetener) (I did honey as a substitute)
1/2 cup plant milk
Spoonful of cashew butter
Spoonful of peanuts butter
(So I didn’t realize this when I made it, but I was supposed to blend all of this first, whoops. So I baked it as it and it was very good. I have seen recipes where you blend and don’t, so it’s up to you. If you blend it it will be more cake like-and if you don’t will have oats in it.)
Mix everything, but the nut butters, together. Pour the mixture into a greased ramekin, I used coconut oil to grease, and plop the nut butters in the middle and cover with the batter. Use the rest of the coconut and pecans as a topping on the baked oats. Bake at 375 degrees for 15-20 minutes and enjoy! I topped with strawberries, it was so yummy!
