The other night I decided to switch up my salmon marinade and went for a spicy garlic honey marinade with some stir fry noodles on the side. It would have been really good with brown rice or even cauliflower rice. Makes enough for 2, or for some leftovers.
Salmon marinade
1/2 pound salmon fillet
4 tbsp soy sauce/tamari
1 garlic clove
1 ginger knob grated
1 tsp paprika
1 tsp cayenne pepper
1 tsp sesame oil
1 tsp sesame seeds
First pour the soy sauce on the fillet while you get the rest of the marinade together. In a small bowl mix the ginger, garlic, sesame oil, paprika, and cayenne pepper into a paste. Massage pasta onto the salmon and then pour the sesame seed on top (like how you sear a tuna steak). Set aside and get everything else ready.
Spicy garlic honey sauce
1/4 cup honey
1/3 cup soy sauce
1/2 lime, juiced
1/2 tsp onion powder
1/2 tsp onion flakes
1 tbsp sesame seed oil
1/2-1tsp Sriracha sauce
4 garlic cloves, minced
1-2 knobs of ginger minced
1 tbsp cornstarch (mixed with 1 tbsp water)
1 tbsp sesame oil
1 green onion, minced
Mix together the ingredients for the sauce.
Stir fry recipe
2 oz of brown rice ramen noodles
1/2 head of broccoli
3 slices of onion, cut into long strips
1 green onion
Sauté the veggies in a pan to you liking, while boiling water for the noodles. In another pan, I sued an iron skillet, heat 1 tsp of sesame oil and cook the salmon 4 minutes each side. Then pour in the sauce in with the salmon and cook for about 2 minutes. there will be extra and you can use it either on top of salmon or with the noodles and it will be very saucy. Pour the veggies in the skillet with the sauce, and then the noodles. Mix together and enjoy! I garnished with sesame seeds and leftover green onion.
