I was having a hard time coming up with a dinner idea tonight. I had some veggies in the fridge and ground turkey. So I came up with this tasty rice dinner and I highly recommend it! I used zucchini, broccoli, and green onions (you can use whatever but I that’s what I had and I thought it went well together).
Rice: [serves 3/I had 2 servings and leftover plain rice - so reduced rice and water quantity if you don’t want leftovers)
1 cup brown basmati rice (washed)
2 cups water
Bay leaf
1 tsp turmeric
1 tsp salt
1/4 tap za’atar
1tsp sesame oil
Add rice, water, and spices to a pot. Cook rice according to instructions.
Turkey Meat & Veggies [serves 2]
1/2 package of ground turkey meat (.5 lbs)
1/2 zucchini
1 cup broccoli
2 green onions
1 tsp cumin
1 tsp of rep pepper flakes
1 tsp salt
1 tsp black pepper
1 tsp mint (dried, if using fresh finely chopped - about 6 leaves)
1 tsp basil (dried, if using fresh finely chopped - about 6 leaves)
1/2 tsp adobo seasoning
1 1/2 tsp za’atar
4 cloves of garlic
1 lemon
Cook ground turkey meat in a saucepan. Once cooked, add in zucchini, broccoli, and green onions. Cook for about 2-4 minutes and add in all the spices, garlic, and lemon. Cook for about 6 minutes (I like my turkey to be a little golden). Then mix in the rice (I did not use all of it so I would have leftover plain rice) and top with tzatziki! It was so yummy and has a ton of potential for variations!
