My favorite dinner is by far this cowboy jack salad, shown to me by a friend, with teriyaki chicken. It is so amazing my family and I make it at least once a week. We cut chicken breasts into cubes and marinate them in teriyaki sauce for 2-3 days in the fridge, and grill them on skewers. I have been trying to convince my dad to try it with chicken thighs just grilled, not skewered, and I think I have finally gotten him to agree (he’s not a huge dark meat fan). So next time we are going to try that, but the skewers are amazing too and very convenient.
Recipe for cowboy jack salad:
Serves 5-7
1 15 oz. can chickpeas (drained and rinsed)
1 15 oz. can black beans (drained and rinsed)
1 bell pepper (diced)
1 hothouse cucumber (diced)
1 red onion (diced)
1 cup corn (used frozen, and defrosted)
1.5 cup grapes tomatoes (halved and quartered)
4-5 cloves of garlic (diced or crushed)
1/2 bunch cilantro chopped
3/4 cup olive oil
1 1/2 lemons juiced
1 tsp salt
1 tsp pepper
2 tsp cumin
2 tsp adobo seasoning
2 tsp sesame seeds
Salt and pepper to taste
Teriyaki chicken:
My favorite sauces are the Veri Veri Teriyaki marinade and sauce or the Trader Joe’s Soyaki sauce.
We did about 5 chicken breast, and had plenty of leftovers (which is the goal). Marinated in fridge for 3 days and grilled for 14 minutes, flipping Galway, on medium heat.
We like to eat this with my homemade hummus, naan and tzatziki (we didn’t have any this time). Makes a great leftover lunch or dinner!
