INGREDIENTS:
For the Cucumber Dill Sandwich:
• ▢½ cucumber large
• ▢4 oz cream cheese softened
• ▢lemon zest
• ▢1 pinch salt
• ▢dill chopped
• ▢6 slices potato bread
For the Cranberry Chicken Sandwich:
• ▢3 chicken breasts boneless
• ▢¼ teaspoon thyme
• ▢3 tablespoons olive oil
• ▢2 oz cranberries
• ▢1 sprig watercress
• ▢1 tablespoon mayonnaise
• ▢2 teaspoons dijon
• ▢6 slices potato bread

INSTRUCTIONS:
For the Cranberry Chicken Sandwich:
• Preheat the oven to 350 degrees and season the breasts with olive oil, salt and thyme. Bake it for about 30 minutes. And let it cool, rip the cooked chicken into 1½ inch pieces.
• This step could be messy take the cranberries and halve them and smash them in a bowl.
• Take a separate bowl and mix mayonnaise and dijon mustard.
• Combine all the prepared ingredients and mix them all together.
• Spread the butter over the white bread and add the chicken mixture and a layer of watercress. Cut off the crusts and slice them into rectangles.
For the Cucumber Dill Sandwich:
• Chop the dill. Combine it with softened cream cheese, lemon zest and a pinch of salt. This mixture can be used again.
• Cut the slices of cucumber
• Spread the cream cheese mixture onto the white bread and add the cucumbers slices and cut off the crusts, then cut rectangles.
