He points out that gliadin breaks down into polypeptides called exorphins in the intestinal tract. These exorphins cross the blood–brain barrier and bind to the opiate receptors in the body—and increase appetite, induce behavioural changes such as outbursts and inattentiveness in children, autism and so on. Gliadin provokes a stronger immunogenic response and increases intestinal permeability (leaky gut).
Wheat also contains a lectin called wheat germ agglutinin (WGa), which has been shown to interfere with protein digestion and increase gut permeability. lectins are a type of protein that chooses and binds to carbohydrates on cell membranes. They can trigger an inflammatory response, causing gastrointestinal symptoms like cramping, bloating, flatulence, hyperacidity, diarrhoea, nausea and vomiting. They are also implicated in food intolerances, and inflammatory and autoimmune conditions such as rheumatoid arthritis. Many food allergies are actually immune system reactions to lectins.
lectins in food protect the seeds from pests and insects. The genetic modification of plants created a fluctuation in lectin content to develop pest-resistant varieties. our bodies do not digest lectins but create antibodies against them! scientific literature shows that dietary lectins disrupt intestinal flora by reducing natural killer cells, the important defences against viruses and other invaders, thereby affecting our immune functions. They are also pro-inflammatory and contribute to leaky gut.
WHY DID ONLY WHEAT BECOME IMMUNOGENIC ?
• While we do not know the exact reasons, one possibility is that wheat is a known allergen. historically, wheat allergy and celiac disease have been recognized as health issues for over a century.
• When a known allergen is further manipulated by making chromosomal changes in the genetic material (done during the Green revolution) without long-term safety trials, the emergence of a super immunogenic seed is not hard to imagine.
• besides higher yields, it was designed to withstand higher pesticide load; this allowed heavy use of glyphosate and other weedicides, leading to dysbiosis, leaky gut and chronic inflammation.
