Pico de gallo is fresh, cold and delicious. It’s essentially uncooked salsa with more texture, and it’s great for hot summer nights when you don’t want to cook.
This recipe is inspired by the one my mom makes, which she got from a friend when we lived near the border of Mexico.
Ingredients:
3 large tomatoes, finely chopped
1 small red onion, finely chopped
1/8 cup jalapeños, finely chopped
cilantro, finely chopped
juice of 2 limes
1 clove garlic
Salt, to taste
Directions
1. Combine all ingredients except salt in a small mixing bowl. Salt to taste. This is very important—don’t just guess! I like mine just a breath away from too salty so it tastes like the ocean whenever I take a bite. Serve with tortilla chips, tacos, and quesadillas. You can even put a scoop in your queso before you serve it.
