The Music of the Monsoon Lemond Cake Cookies have a persona of their own: “What better way to get yourself dancing barsaat mein than with this nutty nimbu treat?” they tease, from the bakery’s Instagram page.
Das’ love for adventures and creations through experimentation translates into a thoughtfulness satisfying varying palates, reflected in the “subtly lemony” cake cookie, and the “in-your-face” lemon bars.
“You can take pretty much the same ingredients, and just by adjusting the proportions make two completely different desserts,” Menon explained.
One of the toughest projects they’ve cracked is a nutty crust fruit tart, which involved several layers of trial-and-error Menon recalls: How do you make custard without eggs, get the right consistency without milk or cream? How do you keep the texture from flaking when you’re using almond flour? How do you keep the crust crisp, under the weight of the custard?
After researching a bunch of methods from apricot glaze to chocolate, they finally cracked the code to keep the crust and custard in harmony with each other.
“I never thought of myself as a cook, which I'm not, but I never thought of myself as a food researcher either, which I had definitely become,” Menon said.
Before Jaggery Desserts, no one in the household thought of themselves as entrepreneurs. Discovering these new terrains, with Das realizing that his skills are appreciated by people who doesn’t know, has been extremely gratifying, Menon explained.
Their commitment to the authentically unrefined aligns with their plastic-free packaging — finding cardboard boxes without plastic windows was an adventure in itself, they write on their website: “we waited and watched and begged and pleaded, and said we did not mind the delay or the added cost, but we wanted pure and simple cardboard boxes. finally, that’s what we got. and that is what you will hold in your hand when you order a box of jaggery desserts!”
