Eleven Madison Park, the world renowned restaurant by chef Daniel Humm, announced that it will be going plant-based when it reopens. The three Michelin star restaurant joins the latest high profile culinary group to go plant-based. Just last week, legendary food magazine Epicurious announced they will no longer publish beef recipes.
The movement to plant-based has skyrocketed over the past decade, as more and more Americans adopt the practice. Citing reasons such as animal cruelty, a more healthy lifestyle, and the environment, the move towards plant-based has sprung up a new economy. Companies such as Beyond Meat and Impossible Foods have become billion dollar companies by creating plant-based meat that looks, smells, and tastes like real meat.
I personally am not plant-based, but many friends and colleagues are, and from conversations they are extremely happy with the decision. They report that they feel cleaner and healthier, and good for them for that. I have tried the Beyond Burger and happen to find it pretty good, though I am not ready to give up meat completely as of now. It should be interesting to follow how many other restaurants and brands go on the trend towards plant-based.
