One of my favorite salads is this vegan Caesar Brussel Spout Salad. It is so tasty and full of wholesome ingredients. I love using nutritional yeast in recipes as it is full of vitamins and minerals that are great for you. I have tried many vegan Caesar dressing recipes, and this one is definitely my favorite.
Recipe:
Serves 5-7 people.
4-6 cups brussel sprouts (halved and quartered m, I mix up the sizes for variety)
Optional: can of chickpeas (drained and rinsed); 1/2-1 cup of pistachios
Dressing:
3-4 cloves of garlic
2 tbsp of Dijon mustard
4 tbsp of tahini
1.5 tbsp of apple cider vinegar
1/2 cup water
1.5 lemons juiced
4 tbsp olive oil
4 tbsp nutritional yeast
2 tsp onion powder
2 tsp black pepper
1.4 tsp salt
Croutons:
1/2 sourdough baguette diced
3 tbsp olive oil
1 tsp garlic powder
1 tsp salt
1 tsp black pepper
1 tsp thyme
Bake croutons for 8-10 minutes at 350 degrees. Cut and rinse your Brussel sprouts. Add all the ingredients for the Caesar dressing into a food processor (if you do not have one you can hand mix, just make sure to crush the garlic cloves first). Put your bowl together by adding the brussel sprouts, croutons, and if you want some pistachios or chickpeas (itโs amazing with both, but this time I did just pistachios). Then add your dressing to your bowl and enjoy!
If your storing for more than a day, I would recommend keeping the dressing separate as the Brussel sprouts soak up the dressing (which can make it super tasty, but did not hold well for multiple days).
