One of my favorite snacks is edamame not only cause they’re fun to eat but they’re so good for you!
For those who are trying to introduce more plant based foods in their diet, edamame might be a good option. Edamame, which is an immature soybean, is a great source of protein as it has substantial portions of the 9 amino acids in it. Also, soybeans tend to be low in carbs and glycemic index (which basically means it gives you energy without spiking blood sugar too much). Edamame salad:
(I did not measure exactly, but this is a good starting point)
1 1lb pack of frozen shelled edamame (cook according to bag instructions and then just de-shell them, or use already de-shelled edamame (I just couldn’t find any at the store)
4 green onions sliced and diced
1/4-1/2 teaspoon of sea salt (I did about 1/2)
1 1/2 teaspoon of sesame oil
1 1/2 teaspoon of Tamari (glueten free soy sauce)
1 teaspoon garlic minced
1 teaspoon ginger minced
*I ate this with pineapple/chicken teriyaki so I added some of the teriyaki sauce to the edamame (about 1 teaspoon)
This salad was so good and can be eaten alone (I ate half before dinner…whoops) or on top of different rice bows. I had it with pineapple/chicken teriyaki brown rice bowl and it was very good. Highly recommend!
