There are several components of dairy that could be neutral, beneficial or downright harmful—and their effect varies from person to person. Keeping a log of one’s own symptoms is really the best way to find out.
That milk is a good source of nutrients is true. Mother’s milk, in particular, is a high-energy delivery system—and helps babies grow exponentially. In adults, however, drinking milk is not always productive. Milk protein consists of about 80 per cent casein (this content is intensified in cheese). but casein shares some similarities with some components of gluten, and it, too, can cause a histamine or allergic response, such as increased asthma, headaches and gastrointestinal issues. That’s why people sensitive to gluten have an increased risk of being intolerant to casein—in fact, research shows that half of those who have celiac disease are also sensitive to dairy.
Whey is a blend of other proteins and hormones present in milk, and includes immunoglobins and insulin-like growth factors. This means that dairy products cause the body to release large amounts of insulin. In those with metabolic syndrome (see chapter on glucose), this can lead to insulin resistance, which can trigger inflammation. Whey protein powder may alter the microbiome negatively. Either way, if an individual wants to improve insulin sensitivity, it’s best to limit the amount of dairy taken.
The CALCIUM CONUNDRUM
‘but what about Calcium?’ This question comes from the perception that milk is high in calcium and so is needed to build strong, healthy bones.
Fallacy 1: bone-building depends solely on calcium
Fallacy 2: your calcium intake is the only thing that matters, and
Fallacy 3: dairy is the only good source of calcium.
Fact: bone development depends on many factors: nutrition, sun exposure, exercise and hormone levels. yes, calcium is important, but so are three critical vitamins: vitamin C, K and d. as are minerals such as magnesium and phosphorus. To build strong bones, one needs:
